Unlike store-bought beef (often processed in massive facilities and shipped across the country), our beef is processed in small batches at local USDA-inspected butchers. It’s then blast frozen and vacuum-sealed to lock in peak flavor, freshness, and texture — no long delays or thaw-repackaging. In fact, most grocery store beef is frozen and thawed before it ever hits the meat case.
We also dry-age our beef for 21 days, enhancing tenderness and deepening flavor — a step most store meat skips.
